Welcome to my blog! I’ve been using this off and on for so many years, but I decided that it was time to recommit to this thing. I’m in the midst of a new change in my life, so I figured blogging about it would be the best way to go about it.
I’m like…90% sure I have a corn allergy. So far, I’m breaking out into hives eating corn kernels, products with corn syrup, corn starch, skin contact with beauty and cleaning supplies that have corn or corn-based derivatives in it (I’m going to do an education post soon for more in depth stuff). Over the past year or so, I’ve had eczema that I always thought was just from living in New England. Now that I’m aware of this allergy situation (and did some small tests), I actually think it’s a milder reaction to certain corn-based products.
Seeing my GP on Wednesday for a referral to an allergist, and armed with pictures during various breakouts, ingredient lists from what caused the breakouts. I’ve never had allergies, as far as I know. Nothing that would cause skin reactions, anyways.
I have to admit I’m a little nervous. Big implications in every sense of the way, and I’m not sure where I’m not allergic. Corn is in everything (not including food) – medications, vitamins, plastics, detergents. It’s turned into a sugar, it’s used to keep food items from going bad, it’s in almost anything processed once you learn the nicknames. I’m grateful it doesn’t bring on anaphylaxis, but it’s still a minefield of stuff to figure out.
The silver lining is that about 6 months ago, I switched to a vegan diet and living in a small town, I’m already used to cooking a lot, already used to restricting my diet (which has definitely helped me get more creative to make the foods I want to eat). I definitely need to up the ante and increase my repertoire of cooking skills/trying new foods – in particular, vegetables. I’m a creature of habit with certain veggies, and I’m going to need to throw that door wide open. If I had to do this when I was going out to eat several times a week and my cooking skills amounted to making boxed mac and cheese, woo boy, I’d be a hot mess right now. If you’re feeling like a hot mess, no fear, I am compiling a page of resources.
I’m really hoping this blog will be both a learning tool for others. I also want to create/share tasty corn-free recipes, especially for my fellow plant-based corn allergen folks, or anyone looking to add more plant-based meals to their corn-free diet. I generally use it as a happy place, too – there will be cute breaks (aka animal picture posts) from time to time.
